Joël Wallecan
Dr. Joël Wallecan is leading the Global Material Science team within Global Core R&D, a longer term research organization within Cargill. His team studies the structure-function relationship of ingredients within food matrices, including the relation to oral breakdown processes and sensory. The research approach focuses on kinetic and mechanistic aspects in combination with advanced imaging and machine learning in order to develop multi-scale models. His primary research focus is on plant cell wall polysaccharides and the development of novel label friendly ingredients derived thereof. In recent years he also took the lead on developing the Health and Omics strategic growth platform within Cargill Global Core R&D.
